Spread Some Holiday Cheer With Handcrafted Cocktails

Many bars and restaurants are responding to the consumer demands for fresh juice in the cocktails that they serve.  Distinguish your establishment from the competition with a signature handcrafted cocktail.  Get creative when naming the new beverage and offer a virgin option too.   Using fresh squeezed juice in your mix will improve the taste and guarantee repeat customers.  Fresh squeezed juice will add a delicious mix to sodas and other non-alcoholic drinks as well.  Many customers want to enjoy a holiday cocktail but not the alcohol so including a virgin cocktail section to your menu is a great idea.  Here are a few of our favorite recipes.  Give them a try and let us know what you think.
Salavatore Calabrese created a stylish guide to virgin cocktails.  In his book, “Virgin Cocktails” by Salvatore Calabrese he gives a great introduction to the art of creating the ultimate virgin cocktail.  According to Calabrese, “The ultimate virgin cocktail is one untouched by alcohol and the human hand.  A cocktail shaken to perfection, and balanced in all flavors.  The cocktails texture is smooth on the tonuge and it’s aroma piquant;  its color reflects the innocent purity of the ingredients.  In practical terms what makes a virgin cocktail?  Fresh fruits, ice (cubed or crushed) just-pressed juices, and an excellent recipe.  The garnish and glass are important too.”
Tips:  “Ice must be fresh and dry”
Apple-Beet Beauty
2 oz apple juice
2 oz fresh beet juice
Shake the juices with ice and strain into a cocktail glass.
Carrot and Cranberry Cocktail
4 oz carrot juice
2 oz cranberry juice
2 teaspoons clear honey
Shake all ingredients with ice to let ingredients combine well.  Strain into highball filled with ice.
Virgin Mojito
1 teaspoon superfine (caster) sugar
2/3 oz fresh lime juice
bunch of fresh mint on the stem
Put the sugar and lime juice in the bottom of a highball with a thick base.  Add the mint leaves and muddle with the end of a bar spoon or a wooden muddler.  This releases the essence from the mint.  Fill the glass with crushed ice.  Top up with sparkling water.  Stir.
